Red Onion, Raisin and Chilli Pepper Jam

Never tasted it? Well, the time has come… Because this jam is one of the favourite combinations for aperitifs and appetizers. Especially with cheeses and salami. Made it as always as it used to be done in the past, in an artisanal way. I chose the red onions of my land, sweet and cheerful, and I combined them with the fiery and decisive character of chilli pepper to give them even more liveliness. The flavour, however, is softened by the raisins, thus creating a trio of gourmet flavours.
