Citron and Fennel Marmalade

Don’t be fooled by the cedar’s thick peel: that is what is mostly used. Also for its pleasant scent, its intense texture. We have chosen to combine the citron with another typical ingredient of this part of Sicily: fennel, which grows wild in the Hyblaean countryside and is widely used in cooking, combined with fish and meat. With its wild taste, it gives the jam a very fresh flavour, which can be appreciated especially with robust dishes, summer salads and salami.
