Almond Paste

The almond paste, 200 gr. loaf, is excellent to make almond milk, a very thirst-quenching drink in the summer heat, excellent to soak some bread in or, for the gourmands, cookies such as double Savoiardi or Gallettine. The recommended dose is one loaf for 1 liter of water. You can also make Biancomangiare, a typical Sicilian sweet, by adding 70gr. of starch, being careful not to form lumps, then putiing everything in a saucepan and, over low heat, keep stirring, bring to a boil for about two minutes, then put in wet moulds and let it cool down. The Almond Paste can also be used to decorate cakes, fruit shaping, etc…
